So far so good and it’s Day 2

I'm a big fan of Indian food.  Can eat it morning, afternoon and night. No joking.

Those who know me, know that I’m a big fan of Indian food. Can eat it morning, afternoon and evening!

It’s got to be said again, making 3 healthy meals a day on a $6.65 budget is not easy especially since I never seem to have enough time to eat properly during the days.  Like everyone else on the challenge, I will just have to make it work.  Today went well overall.  Ate three meals and snacked healthy.

I’m away from home for much of the day and if I don’t cook in the evening then, there’s just not enough to eat.  Therefore, no matter how late or how tired I am when I get home, I have to cook dinner and make sure there’s enough for tomorrow’s lunch.

It’s a darn good thing that I don’t have to care for elderly parents or children.  I suspect that would go hungry.

Monday’s menu:

Breakfast – HK style milky tea and multigrain toast.

Lunch – Bolognese & tortellini (leftover from yesterday)

Dinner – Puree of collard greens (spinach substitute) & paneer, aloo gobi and chapati

Snack – Mixed bag of dried cranberries, raw almonds and toasted cashews

Second day of the challenge and there’s no dessert – which I am starting to miss. I’m not much of a dessert maker and have always been better at creating savoury dishes.  However, I do have sweet tooth.  Since I don’t drink alcohol I won’t be missing that. Which can be expensive, so that definitely works in my favour.
